The only boat restaurants with meals prepared on board! For nearly 20 years, the catering and gastronomic services of Croisières AML have been an important activity in the urban areas where more than 100,000 meals are served aboard annually.  This highly appreciated dining experience is in constant expansion. As of today, the Cavalier Maxim and the Louis Jolliet are the only boat restaurants in the Province of Quebec where all meals are prepared and served aboard.

The Cavalier Maxim and the Louis Jolliet offer three comfortable dining rooms with panoramic windows, exterior terraces and all the services to make your escapade on the Saint Lawrence River a must this summer!  For a delicious brunch, a 5-course dinner cruise or a special made-to-measure event, AML’s qualified personnel are always there to welcome you aboard and provide the best service possible.

Santino Testani

Executive Chef of the Cavalier Maxim and Croisières AML’s Corporate Chef

 

A graduate of l’École Hôtelière du Collège LaSalle, Santino Testani began his career at the well known Fairmont Château Montebello. Before joining Croisières AML, he developed his expertise in the best restaurants in Canada: Dalvay by the Sea in Prince Edward Island, Café Méliès on St-Lawrence Boulevard and Hotel St-Sulpice on St. Denis Street in Montreal. He has distinguished himself by his curiosity, creativity and desire to offer his clientele a unique dining experience.  


Known for his refinement and passion for food, Santino adds a personal touch to all his culinary creations.  Driven by a desire to continually provide the very best, he offers high quality meals prepared with professionalism and pleasure weather it is a hearty brunch or a 5-service dinner. With his young and dynamic brigade, approximately 60 000 meals are served annually aboard the Cavalier Maxim, a most interesting challenge for our Executive Chef!

François Samson

Executive Chef of the Louis Jolliet

 

With over 13 years of experience as a chef, François Samson has a vast expertise in the field of culinary creation and the management of a restaurant kitchen and its staff.

 

Having served as executive chef at Le Grand Lodge Mont-Tremblant, Mr. Samson has proven his ability to manage a large volume of orders and a large staff.  At the helm of the kitchens of SONAR tapas bar in Quebec City, he had the opportunity to perfect his skills before taking over as chef at Diable ô Anges, Il Pappagallo and Mustang, three restaurants in Quebec City where he simultaneously managed the kitchens.

 

The Louis Jolliet (Quebec City) and the Cavalier Maxim (Montreal) are the only boats restaurants in Quebec with fully equipped kitchens aboard. Meals served to passengers are prepared the same day with fresh ingredients. The Louis Jolliet, with a capacity of 1,000 passengers, can accommodate up to 700 people for a dinner cruise. Croisières AML is the largest cruise company in Canada serving over 100,000 meals annually aboard its boats, and catering to over 500,00 passengers each year.
